Ever wonder what wood to use to smoke a piece of meat, or how much to use?
It would be a really bad idea to use Mesquite to smoke a piece of chicken as it has a very potent and oily flavor and will really overpower the flavor of the chicken.
If I am cooking pork, chicken or lamb I am going to use a fruit wood like Cherry, Peach or Apple. Fruit woods really complement poultry pork and other liter meats.
