A big question I get these days is how to get crunchy skin on chicken. My answer is deep fry it!
Well since we can't do that on a smoker, the only way to do that is hot and fast. When I'm trying to cook a chicken with crispy skin, I always spatchcock it. When you cook a chicken this way it's way faster, and the skin is always crispy.
Smoking chicken is quite different. If your finished product looks like you rolled it in ash, there is a good chance it is way over smoked.
Don’t forget that just a little bit of smoke on chicken will go a long way.
